Credentials step didn't work. Jenkins is also pretty old technology in the CI/CD space and this approach requires complex Jenkinsfile to work. This module could use an update.

Could not get beyond Provisioning Jenkins. Error says (gcloud.container.clusters.create) The project property is set to the empty string, which is invalid.

The lab failed. After following the instructions quite literally, Jenkins could not add the job correctly. The "Credentials" section for the Git source was always "- none -". Nothing I tried could correct the issue. Did Jenkins version change after you wrote this?
