The high availability of the peering was not working. As soon as the tunnel 0 on the vpc demo project was deleted, I could not connect to the demo-vpc instances from the ssh'ed on-premises VM anymore. The tunnel 1 was marked as open and functioning in the console though. So I assume, something was either off with my configuration or with the class setup.
