Having the 1-hour time-limit discourages students from deeply exploring what they are learning as there is always the pressure to complete the lab before time runs out. While you may think, "You can always run it again" - one hour is a very large time investment for folks who have to learn about 100 other things, too - and it is unlikely that I would re-run the whole lab just to "poke around" some more in a few select areas.
